For myself I love my keto pumpkin recipes.
This is my favorite time of the year when everything turns to pumpkin spice and pumpkin flavors from coffee to snacks to all kinds of different foods.
This amazing keto pumpkin cookie recipe is no slouch either.
Only 30 minutes from start to finish and you can have yourself some delicious soft chewy pumpkin spice keto cookies.
These are one of my family favorites when it comes to cookie recipes.
These cookies are great for a Thanksgiving dinner after snack.
You can even enjoy them throughout all of the winter holidays with all of your family get-together's you may be having.
Even the non-keto peeps out there will love them as they won't even know that they are low carb and more less designed for the keto diet.
The best part is after they try them and fall in love with them when you tell them that these are keto cookies they will not believe you.
That's how good this keto pumpkin cookie recipe is, I promise you once you eat one you won’t be able to stop.
Perfectly Proud Keto Pumpkin Cookies
- 7 oz almond flour.
- 4 oz melted butter (unsalted).
- 1 large egg.
- 2 oz erythritol.
- 2 tsp pumpkin spice mix.
- 4 drops pumpkin extract.
- Preheat the oven at 160 degrees.
- In a large bowl, mix together almond flour, erythritol and pumpkin spice mix until well combined.
- Stir in egg, butter and pumpkin extract until a sticky dough is formed.
- Using a tbsp, make 22 balls and flatten each one on a greased baking tray.
- Bake for 25-30 until golden and crispy.
- Allow to cool.
